Rainbow pasta
Pasta doesn’t have to be boring!
When you don’t feel like cooking, but you still want something nourishing and filling, pasta is an easy go-to meal for lunch or dinner.
The rainbow pasta is one of my favorite ways to make a simple meal feel more balanced, by adding more color, variety, and flavor.
Instructions:
1 medium onion, diced
2-3 garlic cloves, minced
1 (16oz) pasta package (I used brown rice pasta from Trader Joes)
1 jar pasta sauce (I used Calabrian Chili pasta sauce from Trader Joes)
2 sausages, sliced
1 medium zucchini, diced
1 medium bell pepper, diced
1-2 cups of broccoli florets, loosely chopped
1 bunch of kale, stems removed, massaged, and chopped
5-6 asparagus spears, chopped (when in season)
Olive oil
Salt and pepper to taste
Optional Toppings:
Parmesan, nutrition yeast
Lemon juice
Fresh or dried herbs: parsley, cilantro, oregano, or thyme
Directions:
Cook pasta according to package instructions.
While pasta cooks, heat 1 Tablespoon olive oil in a medium pot.
Add onion and cook until translucent, about 5 minutes.
Add garlic and saute for 1 minute.
Add pasta sauce and reduce heat to low.
Add vegetables, stir and cover loosely with a lid.
Cook until tender, stirring occasionally.
In a separate pan, cook sausages until browned and cooked through. Set aside.
Drain pasta and add it to the vegetable sauce.
Stir to combine.
Add sausages back in and mix.
Top with parmesan or nutritional yeast for some cheesy goodness.
A squeeze lemon juice adds brightness.
